I used to be the kid that would eat parmesan cheese by the spoonfuls on spaghetti night.
When we went to Grandma's house, there was always a cheese platter out before dinner... asiago was my favorite.
American cheese on a hard white roll was my everyday lunch.
I was a cheese fanatic. And now I don't miss it at all.
I don't miss the flavor, and I certainly don't miss the awful symptoms I would experience after eating.
How is that possible.???
Well it's certainly not magic and I'm not unique in overcoming cheese craving.
Cheese is so addicting because contains opiate molecules
So if you're struggling to separate yourself from cheese, give yourself a bit of break.
Make changes slowly.
Substitute with foods that address all of the flavor elements that cheese has to offer.
This mac n cheese has the salt, sharp, tang and creaminess that cheese has to offer.
